Paolo Vodopivec’s vineyards are located in very close proximity to the border of Italy and Slovenia in the unique area of Carso, home to the white Vitovska grape varietal. Vodopivec focuses solely on this one grape, and takes and extraordinarily hands-on approach, from vineyard to cellar.
Yields were naturally low, concentrating flavors. Hand harvested grapes were destemmed and crushed, placed in big conic vats of Slavonian oak, fermented and left to macerate for 15 days without temperature control and without the addition of selected yeasts. They underwent punch-downs multiple times a day. After 15 days of skin contact were soft pressed with the traditional press. Ages in 30-hectolitre Slavonian oak barrels for 30 months with appropriate decanting. Bottled without filtration or addition of chemical-physical stabilizers.
